Sugar Free/Gluten Free Strawberry Cheesecake Blondie Shortcake With Sans Sucre

It is so hard to find good desserts that aren’t full of sugar and gluten. Of course it limits us quite a bit. There are few places that carry food products that are really safe for all of us. While the kids and I are gluten free, we watch our sugar level because of Steve. So normal cakes or cookies are heavy on the sugar content and not good for any of us. Enter in Sans Sucre. They contacted me and offered to send me a sampling of products to test. I excitedly said yes but was a little worried too. Would something that was gluten free and sugar free really taste good? Well thanks to Sans Sucre I made a delicious dessert that really worked for us. Now I made it in a large glass just for the photos but you should be able to make it in a small ramekin to make a healthier and more portion controlled size. We were sent a selection of Sans Sucre products. This selection included Sans Sucre Chocolate Mousse Mix – Gluten Free, Sans Sucre Chocolate Fudge Brownie Mix (sweetened with Stevia), Sans Sucre Cheesecake Mousse Mix – Gluten Free, Sans Sucre Classic Blondie Brownie Mix (sweetened with Stevia), and Sans Sucre Key Lime Pie Filling and Mousse Mix – Gluten Free. I decided to try something different and we used the Cheesecake filling and Blondie mix to make our own version of a Sugar Free, Gluten Free Strawberry Cheesecake Blondie Shortcake.

The first step is to follow the directions to make the Sans Sucre Classic Blondie Brownie Mix (sweetened with Stevia). I did this part myself so that it was baked and cooled in time for Charlie to help me. The next step was to make the Cheesecake Mousse.

This is actually so easy that Charlie did it for me.

We followed the directions which was to add milk with the mix and whip it in the mixer for 5 minutes. We then moved it into the fridge to make sure it was set well.

While that was setting, we cut the blondies into small cubes. I used a few strawberries that had been macerated to use as syrup. The final step was to layer the cheesecake mousse and blondie cubes to make a shortcake.

I made ours in a large glass so you could see it well but I would suggest these Anchor Hocking Custard Cups for making portion controlled servings. These ones even come with lids so you can save the deliciousness for yourself! We didn’t use all of the blondies in making these delicious Sugar Free/Gluten Free Strawberry Cheesecake Blondie Shortcake and they were still great with a little sugar free vanilla ice cream:
